- 4 medium potatoes
- At least 6 cloves garlic
- 1/2 c olive oil
- 1/3 c white vinegar and/or lemon juice
- Salt to taste
Boil water in a pot big enough for the potatoes. Peel potatoes, add to the pot, simmer for 30 min. Drain and let cool to a non-hand-injuring temperature. Peel the garlic and put in a food processor with a little of the oil. Blend it until it's in small flaky bits. Put the potatoes in with it and blend until more or less smooth. Add the remaning olive oil, vinegar and/or lemon juice, and salt and blend until smooth. Serve chilled.
It turned out acceptably, although I think I put in too much lemon juice. While the potatoes were boiling, the smoke detector decided to go off for no apparent reason, so I removed it. Since the smoke detector invariably goes off if the oven is turned on, I decided to use this opportunity to make
- Some potatoes, such as red potatoes, that are roughly oblong
- Some garlic
- Some rosemary
- Some olive oil
Heat oven to 400F. Wash the potatoes. Put a layer of olive oil in a saucer. Slice the garlic into slivers and put them in the olive oil. Cut about 6 slots in the top of each potato so that you can put garlic slivers in the slots, but don't cut them all the way through. Put oiled garlic slivers into the slots and put rosemary on top.
